Raw Zucchini Salad

You’ll be feeling quite virtuous with a little of this on the side.  I’m calling this a salad, but really it’s just some quickly peeled and marinated zucchini.  Super healthy made with raw zucchini (which is delicious) it will go well with any meat or fish or even an omelette.  If you want to add rocket to leaf it up and make it more salady, go for it, but it’s not really necessary.  Another good quick and easy recipe from those Two Greedy Italians.  As always, the better the produce, the better the flavour so buy as fresh as you can get your hands on.

 

Ingredients

1 large zucchini, finely shredded using a mandolin or vegetable peeler

1 very small clove of garlic, finely chopped

60ml extra virgin olive oil

2 tbsp Balsamic vinegar

half a handful of mint, finely shredded

 

Method

Whisk together the garlic, oil, vinegar and mint in a serving bowl.

Add the zucchini and turn over to combine.

The loner your leave the zucchini to marinate the better.

Serves 3-4 as a side
